A very popular way for Malawians to prepare chicken on special occasions. Malawians add large quantities of vegeables to their cooking as fruits and vegetables are plentiful in that region.
500g chicken with skin left on
3-5 tbsp cooking oil
3 onions, chopped
5 tomatoes, peeled and chopped
2 tbsp curry
1 fresh green chilli, chopped
1 tsp dried thyme
1 cup water
2 cups chicken stock
1 cup peeled and cubed potatoes
Season the chicken pieces with the salt. Heat the oil in a frying pan and fry the pieces until brown, then transfer to a large pot. Pour off most of the oil into the pan, leaving about 2 tablespoons. Saute the onions until soft. Add the tomatoes, chilli, thyme and curry powder. After a few minutes, pour in the water and stock and bring to a boil. Add the onion mixture to the pot with the chicken. Simmer, covered, for 45 minutes, over very low heat. Add the potatoes and cook for an additional 15 minutes. Season to taste with salt and pepper.
Serve with rice (Malawians generally eat their side dishes with nsima, a sort of polenta made from corn flour).
